Summary

The Waka Sakura Restaurant Back of House Associate plays a crucial role in maintaining the efficient and smooth operations of our kitchen and prep areas. This position is responsible for assisting in various kitchen tasks, ensuring cleanliness, and supporting the kitchen team in preparing sushi and maintaining high standards of hygiene and safety.

This position will entail preparing portioned sushi for guests, weighing, measuring, mixing and preparing ingredients according to company standards. Steaming, frying, broiling, and cutting fish, meats, vegetables and other ingredients. Checking food and ingredient quality and freshness.

Job Responsibilities and Duties include but are not limited to

  • Prepares raw fish in an appropriate manner.
  • Slices ingredients into perfect strips.
  • Makes sushi rice with perfect form and consistency.
  • Manages storage of meat, fish, vegetables and other ingredients.
  • Monitor inventory supplies.
  • Assures quality of dish is always fresh and up to company standards.
  • To keep kitchen always neat, presentable and sanitized at all times.
  • Distinguish and address concerns pertaining all kitchen concerns. Assures demands are met on a daily operation standpoint.

Education and/or Experience

A high school diploma or equivalent; basic knowledge of Japanese cuisine, sushi history and culture preferred; familiarity with different sushi styles, such as nigiri, sashimi, temaki, etc.; able to handle and prepare raw fish and seafood safely and responsibly; or any equivalent combination of formal training and/or experience which provided the necessary knowledge, skills and abilities thereof. 

Language Skills

Ability to read, analyze, and interpret general business data and effectively respond to the data. Ability to write routine reports and correspondence. Ability to effectively present information and respond to questions from vendors, customers, employees, or others involved or associated in the warehouse section function.

Mathematical Skills

Ability to work with mathematical concepts relevant to the role such as addition, subtraction, multiplication, and division. 

Reasoning Ability

Ability to define problems, collect data, establish facts, and draw valid conclusions.

Certificates, Licenses, Registrations

A valid health certificate or ability to obtain a certification is required for this position.

Other Skills and Abilities:

Knowledgeable in use of computer software applications customarily used in the job function at an appropriate proficiency level.

Work is conducted in a kitchen environment which may include, but is not limited to, varying temperatures and noise. Proper personal protective equipment (PPE) will be provided and is mandatory in designated areas and job tasks. Adherence to safety guidelines and protocols is mandatory. Employees are expected to report any unsafe conditions or incidents promptly.
