Responsibilities: 

  • Oversee all dish room operations, ensuring timely and proper cleaning of equipment (trolleys, trays, silverware, etc.).
  • Monitor water temperature and chemical levels; ensure documentation meets safety and sanitation standards.
  • Verify that clean equipment is stacked, sorted, and stored according to company guidelines.
  • Maintain strict adherence to international waste protocols, FDA, USDA, and HACCP standards.
  • Coordinate with Hygiene, Quality Assurance, and Safety teams to ensure compliance with all regulatory and customer audit standards.
  • Ensure all cleaning chemicals are properly labeled, stored, and documented (SDS, titration reports, etc.).
  • Lead, train, and schedule Dishwashers, Leads, and support staff across shifts.
  • Conduct regular performance evaluations and provide coaching and corrective action as needed.
  • Facilitate new hire training, retraining, and ongoing sanitation education.
  • Analyze sanitation data to identify trends and areas for improvement.
  • Support internal and external audits and inspections.
  • Maintain and update SOPs and SSOPs for dish room processes.
  • Promote a culture of safety, cleanliness, and accountability.
  • Investigate sanitation-related incidents and prepare necessary reports.
  • Partner with procurement to manage inventory and ordering of sanitation supplies and chemicals. 

 

Qualifications: 

  • Minimum 3–5 years of supervisory experience in a dishwashing or sanitation leadership role within a food manufacturing or high-volume catering environment.
  • Bachelor's Degree preferred (Food Science, Environmental Health, Industrial Engineering, or related field).
  • Food Safety Certification required (state-specific); HACCP certification strongly preferred.
  • PCQI certification is a plus.
  • Proven experience managing sanitation teams and working with food-grade cleaning chemicals.
  • Strong knowledge of HACCP, ISO, SQF, and FDA food safety and sanitation standards.
  • Ability to read and interpret sanitation data, logs, and reports.
  • Proficient in Microsoft Office (Word, Excel, Outlook); experience with sanitation management software a plus.
  • Ability to manage workload efficiently in a high-pressure, fast-paced environment.
  • Exceptional leadership, organizational, and communication skills.
  • Willingness to work flexible hours including nights, weekends, and holidays.
