The Food & Beverage Director is a leader that plans and directs the administration and planning of the Food & Beverage (F&B) department to meet and exceed company goals. The F&B Director is responsible for the effective and efficient oversight of all kitchens and food & beverage outlets that prepare and serve various ethnic cuisines.

PRIMARY JOB FUNCTIONS

· Direct and organize the activities of the Food & Beverage departments to maintain the high standards of food and beverage quality, service, and marketing through outstanding customer service.

· Plan and direct the functions of administration and planning of the Food & Beverage department to meet the daily needs of the operation.

· Implement effective controls of food, beverage, and labor costs.

· Ensure compliance with health, safety, sanitation, and alcohol awareness standards.

· Help ensure high standards of food and beverage quality, service, and marketing to ensure outstanding customer service.

· Establish quantity and quality output standards for personnel in all positions within the department.

· Forecast and coordinate the long-term staffing needs of the department.

· Research new products and develop an analysis of the cost/profit benefits.

· Monitor purchasing and receiving procedures for products and supplies to ensure proper quality and price for all purchases.

· Establishes and maintains a system for meeting or exceeding all health and safety and sanitation code requirements.

· Oversees the storage, production, preparation and sanitation areas, service standards, direction, and training of all F&B staff.

· Develops annual budgets for F&B operations. Once approved, is responsible for monitoring control of all food & beverage expenses including food cost, labor, and operating expenses.

· Follows and enforces all established company policies and procedures as outlined in the employee handbook. Follows all guidelines and directives established by Casino Administration.

· Formulates departmental policies and procedures related to F&B operations.

· Coordinates and assists in the formulation of strategy to eliminate over-production and resulting waste through information on anticipated levels of forecasted business.

· Interfaces with local culinary educational institutions to ensure that candidates for employment in the kitchen possess the necessary skills to produce high quality menu items.

· Maintains professional appearance and performance according to department and company policies.

· Performs all other work-related duties as assigned by the President and the Board of Directors.

· Assures an environment, which emphasizes cooperation, communications and teamwork within the Food & Beverage Department and all Casino departments.

SUMMARY OF QUALIFICATIONS

The F&B Director must possess the following abilities:

· Leadership- must have strong coordination skills to motivate and lead a large culinary team.

· Organizational Skills- ability to plan, develop and create recipes, procedures, par levels, inventory tracking, cleaning schedules and labor scheduling.

· Training and Development- must be able to bring out the best of everyone on the culinary staff, develop and train everyone to be more efficient and productive.

· Results Driven- must possess the ability to achieve results with financial controls, quality, and service goals. Cannot provide excuses for why things cannot be accomplished but rather needs to be a solutions-oriented leader

· Passion- Must have a passion for food and a drive for excellence in the food production, people development and customer service.

· Solid Understanding and Ability to Execute- must be able to prepare and execute menu offerings at varied levels of a variety of cuisines.

Qualification Requirements: To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. The requirements listed above are representative of the knowledge, skill, and/or ability required.

Education and/or Experience: A minimum of 5 years’ experience as an Executive-level Food & Beverage Administrator in a multi-venue environment; and preparing menu

offerings at varied styles and levels of cuisine. Culinary degree, or its equivalent and food handler’s certificate are required.

Licenses:

· A casino work permit from the Los Angeles County Sheriff’s Department.

· The Food & Beverage Director is responsible for overseeing the food & beverage department processes. Regarding the supervision of employees, however, this position is limited to making suggestions or recommendations regarding the staff to the Chief Operating Officer & Vice President, who holds a Key Employee or Officer License. The Chief Operating Officer & Vice President is the position that makes managerial decisions on behalf of food & beverage department. The Food & Beverage Director understands and acknowledges he/she cannot take any action that would require a Key Employee license.

Other Requirements: Ability to read, analyze, and interprets menus, training materials, technical procedures, or governmental regulations. Ability to effectively present information verbally and in writing, and respond to questions from department heads, managers, co-workers, and customers. Have awareness product, restaurant procedures, kitchen safety, and Health Department standard requirements. Ability to apply common sense understanding to carry out instructions furnished in written, oral or diagram form. Ability to deal with problems involving several foodservice functions occurring simultaneously, always keeping a pleasant and positive attitude.

Other Skills and Abilities:

· Perform and oversee multiple tasks simultaneously and work well under pressure.

· Maintain a system for meeting or exceeding legal Health & Safety requirements including conducting self-inspections, definitive cleaning schedules and on-going maintenance staff training.

· Establish food product standards and specifications.

· Demonstrates ability through successful performance in service areas, including dining room inspections, banquets, cocktails, and receptions.

· Ability to anticipate guests’ service needs and fulfill those needs.

· Effective scheduling of workflow priorities to ensure smooth flow product and service throughout the facility.

· Must be a team player with the ability to both lead and work cooperatively with casino administration and partner agencies.

· Salesmanship qualities; genuine enjoyment of working with and serving others.

· Proficient with the use of a personal computer, including knowledge of Microsoft Word, Excel, Outlook, as well as Food and Beverage inventory control programs.

Employee must occasionally lift and/or move up to 35 pounds. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception, and the ability to adjust focus.
